Dry Aged Beef

Cannibals knew of the extraodinary qualities of dry aged beef. As told by the ancient tribes of Papua New Guinea, the older the tribes man the tastier the feast. This has been passed down by generation after generation and now, thankfully for the most of us, we just dry age our beef.

This is a slab of meat, or a fillet, if so inclined. It’s a tasty treat if you’re into that sort of thing.

I got some Banquet Bags from Smoked and Cured to try my hand at dry ageing some beef at home.

I put this Scotch Fillet portion into one of these special bags and sucked all the air out. Following the recommendations that came with the product I left as much of the blood as I could. This is to help bind the bag to the meat.

Once sealed in the bag I put it on a rack and plonked it in the fridge. You can leave it there for as long as you like.

Bringing Home The Bacon

This follows on from my original Bacon post

Here it is. After turning it over pretty much every day for 7 days. I took it out of it’s bag, washed it off and soaked it in water for an hour.

While I was making Cornflakes I started the coals for the Weber and set it up for smoking. The target temp in the grill was 110°c. Once I got it there it was time to put on the pork belly and finish its transformation into bacon.

Now that that is done, sit back and wait for the internal temp of the meat to hit 68°c.

Remove and let cool.

Enjoy. I was told that once you try your own bacon you will make it again, and this is true for me. I will be doing this again and again.

Cornflakes

Invented when somebody used the wrong flour for pancakes when they were drunk. These crispy flakes have stopped 2 world wars and an alien invasion. The first superfood, Cornflakes have been around since biblical times and are mentioned in the first testament, making them the first ever commercially available product. Some say the sex trade is the oldest profession in the world. Not true, the Kellogg family have been selling cornflakes since man invented fire.


Excuse the spelling mistakes

If you have a good three hours to kill before breakfast make your own Cornflakes. Get these ingredients and combine them all except for half a cup of the polenta and mix it up real good. Then spread the batter onto a baking tray. With the remaining polenta add a small amount of water and make it into a type of bread crumb and sprinkle it on top of the batter.

Put it in the oven at 180°c for 15 minutes and then take it out and let cool. Turn the oven down to 160°c and break up the big cornflake on the tray into the more traditional type of flake you are used to.

Put it all back in the oven and wait another 45 minutes. Take them out let cool. Severe with milk and eat. Yum.

Pork belly delicious in its own. Cured then smoked, it’s the worlds best food. Bacon.

Today I make bacon.

How can you have vegetarians question their life choices? Serve bacon. Everyone’s favourite food. In Australia it was traditionally for breakfast. It has become so much more. In 1976 Bacon invented brunch. At brunch people could eat bacon later in the day without feeling guilty. Bacon used this to infiltrate lunch. Now bacon is used in every meal. Its a breakfast, its a side dish, and it’s used in main meals everywhere. It is even wrapped around vegetables to help carnivores get a balance diet. It made world domination in 1998 when it broke into cocktail and dessert scene, making it truly the worlds most versatile and sought after foods.

Pork belly, one of the most delicious cuts of meats. I turn the famous pork belly into Bacon, known all over the world, and renowned for it delicious properties so powerful that even the most health conscious can’t resist.

I will be using this to make delicious homemade bacon

I mix the sugar, salt, and nitrite together and rub it all over the meat, put in a bag and suck out all the air.

I bag it and put it in the fridge.

BBQ Sauce

Barbequing was invented by the Vikings by accident when, as a joke, one viking threw a pig on top of a burning village. The results speak for themselves. Every nation on Earth has a history of barbecuing Even the worlds youngest nation South Sudan’s top restaurant is a BBQ joint. In the old ages people used tomato sauce for cooking BBQ. As civilisation advanced so did peoples tastes. The dark ages ended with the invention of BBQ sauce, and the world has never tasted better.


There is a lot of stuff that goes into making a BBQ sauce, and who knows what’s in the EZY-SAUCE bottle. I do, I read the label, but that’s not the point. It’s just more stuff. I copped up what I hade to and put most of it in the biggest pot I had.

Mango Sorbet

I turn Mangos in to sorbet

Sorbet, from the Atlantian word meaning “nectar of ice”, on it’s own is plain and ordinary. But, when combined with mangos, a delicious fruit from my backyard and a couple of things from the kitchen… Let me just say, the sum of the parts is much more than the whole.


I put most of this together and poured it into a icecream maker.

The result is very delicious. Unfortunately, though there isn’t enough sugar and it is a little bit hard and icy. Still delicious. There’s not much to making sorbet as long as you have an icecream machine.
